Chicken With Sha Shen & White Fungus Soup

With the sleepless nights and errand runnings, hb is definitely tired out. I was also down with a runny nose and sore throat. A result from extreme lack of sleep - I'm having insomnia of late.

So, I made this soup for hb, myself and my parents-in-law. All of us really needed this soup to replenish all the lost energy and soothe our tired bodies.

Although I was so tired, I told myself I must make this and quickly went to buy the ingredients when Kimi and hb were sleeping after we returned from Ah-ma's creamation.

My sleep sacrifice was all worth it cos when hb drank the soup, the first thing he said was, "So refreshing!" * Very Happy!*

Soup Efficacy
  • Heatiness due to late nights and lack of sleep
  • Removes phelgm and moistens lungs
  • 1 kampong chicken, skin removed
  • 150g Sha Shen (沙參, Radix Glehniae)
  • 150g Yu Zhu (玉竹)
  • 150g White Fungus (白木耳), soaked

  1. Blanch chicken boiling water. Remove and run in thru tap water. Set aside.
  2. Wash the 沙參 and 玉竹and set aside.
  3. In another pot, bring the water to boil on high fire.
  4. Once water is boiling and bubbling, add in herbs and chicken.
  5. Let it boil on high for 20 mins and transfer to slow cooker base. Let it cook on high for a further 3.5 hours.
  6. If using stove, after the 20 mins, switch to very low heat, covered. Ensure that the fire is small enough to ensure small surface bubbling.
  7. Once the soup is ready, you can sprinkle some salt. I do not add anymore as it is tasty enough.
  8. Serve hot. ENJOY!!
