This was done the following day after the BB Chicken Rice as I had some rice left. The rice is so fragrant so I know it will make a yummy dish. Sorry, been so lax in blogging the past few weeks!
You can use plain rice or add some lemon grass & lemon leaf to flavour the rice during the boiling process if you wish.
If you find just serving fried rice is too dry, you can prepare a simple vegetable or miso soup to go with the rice!
Ingredients
- Cooked white rice
- Pumpkin or carrot diced and boil or steam till 50% done
- Some green veg chopped finely
- 1 tsp wolfberries (gou qi zi) soaked slightly till plump
- Tuna fish/salmon or whatever protein you wish to use
- 1 egg beaten
- Some chopped garlic
- Pepper, Kelp or light soya sauce and sesame oil
Method
- Heat a little oil in pan and add garlic, fry till fragrant.
- Throw in rice and fry, using spatula to separate the grains.
- Add the tuna fish. If using other fish/protein, do pre-fry and set aside and add in after frying rice in garlic.
- Stir in the boiled/steamed pumpkin and turn a few times.
- Push rice and ingredients to the side of pan.
- Add in the beaten egg, let it set a bit then mix in the rice and ingredients and fry lightly before adding the veg and wolfberries.
- Continue to fry till fragrant
- Season with pepper and kelp or a little soya sauce and sesame oil.
- SERVE WITH LOVE!
Tips
- For babies who are willing to chew, you can omit boiling or steaming the carrot and just fry it till fragrant.
- If using salmon, pre-fry and set aside before flaking fish to add to the rice. Do not overcook the protein if you intend to re-fry with the rice. Only cook till well done if you intend to add the ready fried rice.
- Use medium high fire to get the nice wok fragrant and you must constantly stir the rice so that it will not burn.
- If your cooked rice is too dry, you can add some water during the frying.
- Experiment with different ingredients to see which your baby likes best.
